Chili Mango Zesty Quinoa Salad
Ingredients:
1/2 C. Dry Quinoa
2 C. Chopped Spinach
1/2 C. Canned Black Beans
1/4 C. Fresh Corn
10 Grape Tomatoes
1 Mango
1/2 tsp. Chili Powder
1/4 tsp. Cayenne
1 Avocado
Directions:
Prepare quinoa according to the package instructions
Chop spinach, tomatoes, mango, and avocado while quinoa is cooking
After the quinoa is cooked, combine all the ingredients in a bowl, omitting the mango, cayenne, chili powder, and avocado.
Sprinkle avocado and mango with cayenne and chili powder
Top each salad with slices of seasoned mango and avocado
