Chili Mango Zesty Quinoa Salad




This vibrant salad is packed with nutrients, tasty ingredients, and is simple to prepare! Be sure to visit your local farmers market to get the freshest ingredients.


Chili Mango Zesty Quinoa Salad


Ingredients:

1/2 C. Dry Quinoa

2 C. Chopped Spinach

1/2 C. Canned Black Beans

1/4 C. Fresh Corn

10 Grape Tomatoes

1 Mango

1/2 tsp. Chili Powder

1/4 tsp. Cayenne

1 Avocado


Directions:

  1. Prepare quinoa according to the package instructions

  2. Chop spinach, tomatoes, mango, and avocado while quinoa is cooking

  3. After the quinoa is cooked, combine all the ingredients in a bowl, omitting the mango, cayenne, chili powder, and avocado.

  4. Sprinkle avocado and mango with cayenne and chili powder

  5. Top each salad with slices of seasoned mango and avocado

  6. Enjoy!
