Mediterranean Cue Ball Squash



These cute, round squashes are super fun to grow and even more fun to eat!

Because of its round shape, Cue Ball Squash is sometimes confused as a winter squash or even a gourd. However, this squash is a Summer Squash. Like other summer squashes, their skin is edible and can be cooked like you would a yellow squash or zucchini.


Mediterranean Cue Ball Squash


Ingredients:

4 Cue Ball Squashes (tops cut off and seeded)

1/4 C. Dry Quinoa

1/2 C. Water

1/2 Tsp. Garlic Powder

1/2 Tsp. Dried Basil

1/4 Tsp. Oregano

1 C. Red Onion, Diced

1/2 C. Chickpeas

1/2 C. Feta

2 Tbsp. Lemon Juice

2 Tbsp. Olive Oil

Fresh Basil to Garnish


Instructions:

  1. Preheat oven to 375 degrees

  2. Combine quinoa and water in a sauce pan, cover and let simmer for 10 minutes.

  3. After they simmer add in your spices, tomatoes, and chickpeas

  4. While the quinoa mixture is cooking, deseed your squash and place them face up on a baking sheet,

  5. Once your mixture is done cooking, mix in half the feta

  6. Fill squash with mixture, top with rest of feta

  7. Mix lemon juice and olive oil together and drizzle over the top of the squash

  8. Bake 30 minutes or until squash is soft
